    Chardonnay Walnut Vinaigrette

    1/2 cup Extra Virgin Olive Oil
    1/4 cup Edmond Fallot Chardonnay Vinegar
    1/2 teaspoon Edmond Fallot Walnut Dijon Mustard
    1/4 teaspoon Granulated Garlic
    1/4 teaspoon Oregano
    1/4 teaspoon Basil
    1/8 teaspoon Fine White Pepper or 1/4 teaspoon freshly ground Black Pepper

    Combine ingredients in a clean glass jar. Shake, shake, shake and use. Store in refrigerator up to 1 week.


    To assemble the Chicken, Pear, Blueberry, Walnut Salad:

    Pound a chicken breast into a cutlet. Lightly sprinkle both sides of the chicken breast with Herbs for Poultry, Himalayan Pink Salt and freshly ground Black Pepper. Broil chicken on high for approximately 10-12 minutes, flip it over after 5-6 minutes, until cooked through. Place mixed greens on a plate. Arrange thinly sliced pears, sliced chicken breast, blueberries and chopped walnuts over the greens. Drizzle with Chardonnay Walnut Vinaigrette and serve.
