Villa Manodori's Tradizionale Balsamic of Modena is Extra Vecchio (Gold Seal). It is submitted to the Consortium of Modena only after being aged at least 25 years. The traditional aging process results in a rich, complex sweet-sharp flavor with a nuanced woody aroma. Strong enough for savory food yet rich enough to drizzle over fruit and ice cream. Try using several drops of balsamico as the finish on a dish of risotto. Try dipping shards of Italian hard cheeses like Parmigiano Reggiano in a small pool of vinegar.
