Enhanced by the flavors of French Tarragon and Celery Salt, Dad's Mid-Century Modern Chicken Salad is tastefully reminiscent of an era gone by — of Sunday church socials, Saturday afternoon picnics and church basement ladies' luncheons. Still perfect in this century for a tasty lunch or snack on a cracker. It's so easy, even a mid-century modern dad can make this recipe taste fabulous every time!
Ingredients
- 1 (12.5 oz) can chunk chicken breast, drained
- 4 tablespoons mayonnaise
- 4 to 4½ tablespoons sweet pickle relish
- 3 to 4 teaspoons dried French Tarragon
- Scant ¼ teaspoon Celery Salt
Instructions
Add chicken breast to a bowl. Spread the chicken out slightly but very gently across the bottom of the bowl. Add mayonnaise, relish, tarragon and celery salt. Stir together gently with a fork, “shredding” the chicken slightly while mixing — but go gently so as not to “mush up” the chicken.
Refrigerate at least 30 minutes to let the flavors meld. Taste and adjust seasonings.
Serve on croissants or small sandwich buns. For a quick snack, serve on crackers. For really “fancy occasions,” top the chicken salad on the buns or crackers with cashew halves.

French Tarragon — A perennial culinary herb favored by connoisseurs for its highly aromatic nature and intriguing fresh flavor. Tarragon leaves boast a delicate, anise-like flavor with hints of mint and pepper. One of the four “fines herbs” of French cooking, the unique flavor is often found in chicken, fish and egg dishes and is the main flavoring component in Béarnaise sauce.
Celery Salt — A blend of ground celery seed and salt. An extremely popular classic seasoning — aromatic, salty and slightly bitter with the aroma of celery. An essential pantry staple that adds flavor to chicken, beef and pork, and extra flavor to coleslaw, chicken, tuna, potato and pasta salads.
