INDIA. Pepper is the world's most traded and most popular spice. White Peppercorns are the inside of the ripe red pepper berries from which the outer skin has been removed. Milder and more delicate in flavor than black or green peppercorns. Use peppercorns whole or grind just prior to use in a recipe or at the table. Use white peppercorns in light colored foods such as cream sauces, soups, egg dishes and mashed potatoes, when the flavor of pepper, but not the dark color is desired.
