ALBANIA. Dalmation Sage has a very aromatic, savory, woodsy, earthy and slightly bitter herbaceous taste that is thought to be superior to the more common sage varieties. Essential for stuffing and sausage, a little bit of sage can add a lot of flavor; use sparingly. Sage easily stands up to garlic and onion; complements citrus flavors and blends with Mediterranean herbs. Use Dalmation Sage to flavor veal and poultry dishes, add to casseroles and incorporate into roasted potatoes and root vegetables. Ready to use, the dried sage leaves have been cut into irregularly shaped and sized flakes.
