BRAZIL. Not a true peppercorn but called so due to its size and flavor. Tiny, round, fragile and rose colored, pink peppercorns are actually the dried berries of the Peruvian or Brazilian peppertree. Pink peppercorns provide a mild pepper flavor with a fruity floral undertone adding color and a rich sweet flavor to almost any dish. Substitute pink peppercorns for some of the black pepper in recipes to add extra dimension. Use whole or crush just prior to use in a recipe or at the table. Wonderful with poultry, vegetables and fish. Add to salads, salad dressings and vinaigrettes, butter and cream sauces, and marinades. Pink peppercorns are also beautiful as a garnish.
