Sri Lankan Cinnamon also known as Ceylon Cinnamon (Cinnamomum Zeylanicum ) is indigenous to Sri Lanka (formerly known as Ceylon) and the West Indies. One of the oldest spices in the world, and the cinnamon first imported into Europe, it is sometimes referred to as "True" Cinnamon. Also popular in Mexico, Ceylon cinnamon is also known as canella.
The flavor of Ceylon Cinnamon is quite distinct from cassia (ground Korintje and ground Vietnamese) cinnamon. The oil content is lower so it is a little less spicy tasting, but has a subtle complexity, a distinct but light and delicate cinnamon taste with just a hint of citrus. Use in dishes without strong competing flavors such as custard, pudding, ice cream, poached pears and stewed fruits. Blend into whipped cream or sprinkle over desserts and hot drinks.
