Coriander is the seed of the cilantro plant. Native to the Mediterranean and Middle East, coriander has been used for flavoring since ancient times. It has a sweet citrus taste with a light balsamic aroma. Use coriander seeds whole or grind just prior to use. Use coriander in spice cakes, gingerbread, sweet breads and apple pie. Coriander adds flavor to beans, pea soup, curry, chutneys, pickles and chicken and pork casseroles. Mix with cumin for Tex-Mex cuisine.
