Steak Seasoning not just for steak anymore! This is an easy recipe to vary the serving size for big or small crowds and a nice alternative or addition to burgers on the grill,. The red peppers make it easier to cook the chicken thoroughly and make a colorful side dish.Make a little extra and the next day slice the chicken cubes thin and make a sandwich with the roasted peppers.
Seasoned Chicken Skewers
2 - 3 large chicken breasts
Wish-Bone Robusto Italian Dressing
2 Red Bell Peppers
Cut chicken breasts in half lengthwise and then into cubes (about 1 – 1 ½”). Sprinkle all sides of the chicken cubes liberally with steak seasoning. Place in a zippered plastic bag and lightly coat with Italian dressing. Seal bag and work chicken cubes around until all pieces are coated. There should be some excess dressing in the bag. Place in refrigerator for 1 to 4 hours, occasionally working chicken in bag to thoroughly coat with marinade.
Heat grill to medium-hot. Cut red peppers into large chunks. Using metal skewers, alternately place chicken cubes and red pepper chunks on skewer, ending with a chicken cube.
Place skewers on grill, but not directly over the flames. Grill skewers for about 5 minutes per side, turning and basting with leftover marinade on all 4 sides for a total of about 20 - 25 minutes. Make sure all marinade is thoroughly cooked. Discard any unused marinade.
Remove from grill. Remove chicken and peppers from skewers if desired or serve each skewer individually.

Variation: No grill, no problem, do these skewers under the broiler.
