A different take on herb roasted potatoes. Herbes de Provence is a blend of summer herbs common to southern France. These crispy potatoes are smothered in the flavors of Provence – fruity olive oil, garlic and fragrant herbs.
Roasted Potatoes de Provence
2-3 pounds mixed new (baby) potatoes
½ cup extra virgin olive oil
1 ½ Tablespoons Trade Winds Spice Company Herbes de Provence
½-1 teaspoon Trade Winds Spice Company Granulated Garlic
Trade Winds Spice Company Sea Salt
freshly cracked Trade Winds Spice Company Black Tellicherry Peppercorns
Preheat oven to 375°F. Scrub potatoes and cut in halves or quarters depending on size of potato. Combine olive oil and herbes de provence in a large bowl, let stand a few minutes to soften herbs. Add potatoes to bowl and using a wooden spoon or your hands turn potatoes until thoroughly coated with the oil.
Transfer potatoes to a shallow baking pan or rimmed baking sheet, spreading them out in a single layer. Sprinkle any remaining oil over the potatoes. Season potatoes with the granulated garlic, sea salt and freshly cracked pepper.
Bake 45-55 minutes or until tender, turning the potatoes over occasionally during cooking.
